It's very mild and extremely tender. The steaks can be cut with the side of your fork. I prepare it just like the whitetail and mulie. Marinated for BBQ or lightly seasoned and fried. People have told me it reminds them of lamb, but since I have never eaten lamb, can not say for sure.
I have found a world of difference between spring and fall bear meat. In the spring, the bears are on a weight loss, and the meat suffers. In the fall. they are eating a lot of berries and apples (when available), and the meat is better. Either way, bear meat is way down my list of favorites.
