For your stated purpose, I'd scratch the 300 off of the list.  Too much unnecessary recoil for deer sized and smaller targets.  The 7mm has a better bullet selection than the 270, but the 270 will offer enough flavors to get by, so flip a coin.  Over all,for your purposes, I'd lean towards the 270, just to be kind to my aging shoulder.

Of course, I'm too slow-witted to actually take it easy on my shoulder, so I'm holding out for the .325 WSM.  It sounds like a nicely balanced medium bore, although it would be far too much for varmint shooting.

Even a 270WSM is a heck of a lot of power for varmints.  I agree, scratch the .300 off your list for your intended purpose because of the unnecessary additional power and recoil.

I must ask, however....why a WSM?  I own a couple but, for your intended purpose, I don't see why you are not considering a standard .270 Winchester - it's flat shooting and good for long distance.  Plus, ammo is much more abundant.  Just food for thought.

Have you considered a 25 WSSM? or 25-06? I think it may be a better choice for you.  My personal choice would be a 260 Remington or something similarly 6mm.

Let me recommend the .243 WSSM.  Only the mighty .240 Weatherby Magnum will beat this hot number in factory offerings.  The .25 WSSM is also a good choice, our son bought one for our daughter in-law, but is a little much for varmints.  Near the power of the GREAT .25-06 but in a shorter, stiffer, stronger action that leads to better accuracy.  Personally any of the WSM(I own a .270 WSM) line isn't suitable for varmints, just over kill.  Lawdog

I have a 270 WSM, and not to be biased or anything towards that cartridge, but GET IT! It's not your grand daddy's 270 WIN. You can download your 270 WSM and shoot V-Max's for varmints, and then when deer season opens up, load up some 140-grain Nosler Accubonds. Of course, you can do the same with the 270 WIN, but for outright velocity (which you said you were looking for), then 270 WSM is the way to go.
