I mostly carry folders for saftey - and also lighter weight. When I was a kid I had a straight knife that cut through the end of the sheath. One evening as I pulled out my belt and let the knife drop - the protruding blade stuck in my foot - not deep but it got my attention.  Ever since I only carry a folder on my belt.  One of the best was  a Puma - when truly sharp I could skin  & gut 3 caribou without stopping. I wore it out over 20 years of very hard use and abuse.  Tried a Remington but the steel was poor. Tried a Browning FTS folder but the gut hoot blade protruded out of the handle too much to be comfortable. Now I'm using a Buck Crosslock Hunter titanium.  Still having a hard time getting used to sharpening only one side.  It worked OK on a moose and caribou but I'm sure there is something better out there. As a back up I carry an older folding Browning  drop pointi n my pack. When I expect to have moose in the picture I carry a straight blade Morseth laminated skinner blade in my pack - but its heavy.  I carry a Knapp saw on all my hunts - saves the knife blade a lot.  Since I sometimes hunt in 0 to -20F I like rubber on non-metal handles.  I hate this current trend of aluminum or other metals as handle material on folders.  Last thing I want is my bloody hand to freeze to the handle at -20.

A few things to look for in a good blade is the quality of the steel, look for at least 440 stainless or surgical steel, many times price indicates quality.
Buck makes a good folding knife, I have had one since I was in my 20's ;)
when resharping you can get a good edge on it. Aim small hit small. RAMbo.
