To tell the truth its hard to describe the taste of the little Javelina,Its not
bad, but they have a very funny odor to them when you dress them out.
I have pit BBQed the meat and its not bad. I dig a pit about four feet deep
and build a fire out of mesquite wood and let ot burn out till it makes a good bed of coals, Cover the coals with a sheet of tin, after you have seasoned the meat to taste wrap the meat in white cloth, wet it down good
then if you have toast sacks or somthing like like it wrap it all up and tie it so it is good and tite then put it on the sheet of tin and cover it with another sheet of tin, then put the dirt back in the pit at least a foot of dirt.
leave it in for a least six hours, take it out unwrap it and have a feast. not too bad. If you did every thing right you should be able to cut it with your fork. This works on bear, boar, goat, pig, sheep, beef, antalope and turkey
