I Think I May Have Foundered!
« on: May 12, 2022, 09:47:48 AM »
Linda cooked my favorite meal for dinner. Liver and onions, English peas, and homemade mashed taters.

Wow. . .
I can understand.  Glass o tea and a container of
black pepper and a fork and I'd be in business myself

"English peas"
That's funny. Besides my own few family
members, that's the first time I've heard that
terminology used in a very long time.
That,  and saying "directly " (drek-lee) instead
of saying " just a minute "
18 MINUTES.  . . . . . .

I'm not a big fan of liver and onions, but, I can eat a pile of fried chicken livers and mashed potatoes with both covered in milk gravy.

KFC used to make the best chicken livers ever. And then one day, they were gone.

Peas  (in the north) and English peas (in the south)...same thing...

I believe they are called English peas, to differentiate them from black eyed peas..which are commonly used in the south, but rarely seen in the north.

Up north I believe black-eyed peas were called cow peas, not that it matters.

Older folks down south customarily eat black-eyed peas, boiled cabbage, and cornbread on New Years Day.

My grandparents, and parents were into that all their lives. It's hit or miss at my house. My taste for boiled cabbage comes, and goes.

I grew up in Illinois and we ate black eyed peas all the time.
The south don’t have a lock on good food. :)

ya black eyed peas are real popular up here but i like them. Had them down in NC at my buddys mothers house when i was in the service and really found i liked them. Wife wont eat them though so i dont have them as often as id like. His mother made the best fried chicken i ever ate. Along with black eyed peas, hushpuppies and sweet tea. I loved that  meal so much she made it every weekend i came to visit for me. My ma was a good cook but that lady was the absolute best cook i ever sat at a table with. Her breakfast buffet for the whole family sunday morning was epic too!

They look to me, more like some kind of a bean.  I have heard the term "cow peas', but not attached to them.

One thing I picked up from southern fare, is grits..  Many here don't care for them, but I do.

They arre not regularly served here...and doubt most diners could come up with them if asked, so I just buy them and prepare them for myself.

My like for blackeyed peas is right up there with pinto beans. Give me a bowl of crumbled up cornbread and either and I have a meal. Liver and boiled cabbage does not appear on my plate, ever. Can't stand either. I do love raw cabbage in salad and coleslaw is great. You can feed my share of liver to the dogs. I had to eat it now and then as a kid but I'm an adult now.

I grew up eating brown beans and cornbread and still love it today. Buddies wife makes a mean chili and serves it over cornbread.

What are "brown beans"? Down here we call "pinto beans", red beans.

I grew up eating hominy grits but Mom cooked them down with bacon grease or lard and let'em sit in the icebox overnight and then sliced it and fried it and we'd put butter and maple syrup or honey on'em.
Southern style grits are good too with some over easy eggs.

10-4 on the breakfast grits, and over easy eggs.

Salt, pepper,  and butter on the grits, and I'll take 5 of the over easy eggs. Got any ice cold milk?

The problem with those jars is the mouth isn’t big enough when you get down to half a jar. That’s why i take all the small chips at the bottom of the bag and mix them up in a bowl with what’s left of the dip mixed in. Eat it with a spoon.

My wife and I eat a lot of Queso but the white version.

Pretty sure they are pinto beans, Mom just always called them brown beans. A West Virginia word.

There are so many kinds of beans out there, it can be hard to really know without the package.
Found out to day the Chinese call Black-Eyed-Peas - Black-Eyed-Peas.

Yep, red beans, pinto beans, same thing here and you want to get the lightest colored ones as that is a sign of their age. I seldom see them in tow sacks anymore, burlap bags for the yankees on here  ;D, but when you do find them a lot of the bags will have little holes cut in the side so the color of the beans can be seen.

;D Folks still refer to me as that damn yankee, but we always had a supply of "tow sacks" handy.
We would keep an eye out for farmers who was making "new ground" and the new field would be covered with poke salat and we'd take the tow sacks and fill them with poke and Mom would cook them down (three boils and rinses) and can them.
They are hands down the best greens you'll ever eat.

Right after Nancy and me were married I picked a batch where pulp wooding was going on and Nancy said "I'm not eating those weeds" but I talked her into taking a small bite and she dragged the bowl over to herself and wouldn't let me have any more.
