What's for supper?

Well today it was fried catfish, hushpuppies and coleslaw. For me washed down with milk. All of my life I've been told drinking milk with fish or shrimp will kill ya. All my life I've been doing it and guess what, it hasn't killed me yet.

Best thing is I fried up enough to have again tomorrow and there was plenty of left over coleslaw too. Gonna eat good again tomorrow.

I've listened to to that milk and catfish myth all my life. I usually heard it while I was washing down catfish with a big glass of cold milk.

Tomorrow will be Southern fried chicken, mashed tators/gravy, fried okra, and sweet tea.

Every Friday is all you can eat catfish, red beans, cole slaw, lotta lemon, sweet onions, and sweet tea.

in the refer for a couple of days.
Maybe some cornbread too.

   Yeah...sloppy here today..raining..   Taking away some of the piles of snow..but caution is in order, since that rain is also covering 2-4 inches of ice in places...

Used to be some really good ones available.
Or at least in this area. Used to be able to
buy really tasty mexican enchilada dinners
and salisbury steak dinners with mashed taters
that had a pat of butter on top and good
tasting corn. Most all of these around here
are chicken nuggets and macaroni and cheese.
Hood rat type stuff. A few of the stores have
the big oversized dinners, but I'll not spend
five dollars for a frozen dinner. I can cook
a good tasting meal myself for a fiver.

I just bought the most recent, coupon - bargain - 5 for 20 bucks and 5 cents off a gallon of gasoline.

I got 3 sliced turkey and 2 Salisbury steak, oddly, the beef ones come with veggies, potatoes and a chocolate muffin, ( good one too) the turkey one comes only with veggies and Cranberry sauce, (the potatoes and stuffing were in the same  part of the tray as the turkey.
Now two trays are a meal for me but I still get enjoyment eating them.

Last night was chicken wings cooked with Granpaw Mike's Wing Sauce along with a tossed salad and ranch dressing. Same goes for tonight eating leftovers from last night.

Hadn't had any boiled taters and

cudighi's last night. Its a local spicy italian sausage i make from pork puts. You shape pattys to fit in a split open french bread load and fry it with onions and mushrooms and put pizza sause, lots of mozzeralla chese, peperoni on the bread and nuke it till the cheese is melted then ladle on the mushrooms and onions. Messy but delicious. Some put peppers on it too but my mix has quite a bit of crushed red pepper in it and its plenty spicy for me. Lots of recipes for it on the internet but they mostly suck. Mine came from an old italian that used to run a restaurant here in town. Even better is when i get to town i buy a loaf of jalapeno cheddar bread from the bakery and split that open instead of the french bread.

if anyone is interested in trying it i make it in 50lb batches but heres the recipe for 4lbs. Try it before you make more
2T black pepper
1T nutmeg
4t salt
1t ground clove
1 1/2t italian seasoning
1/2 to 3/4t fennel seeds (I do 3/4)
3/4t allspice
2t garlic powder (i also add 2t crushed garlic
2 1/2t crushed red pepper flakes (this is fairly warm if you dont want it as spicy add half that)
1/2t cinnamon
1/2t mace
1/3 cup of cheap red wine. I tried cooking wine but its a bit stronger tasting then i like. Some use it and some do a 1/2 cup.

grind it through a course plate mix in all the ingrediency real well then grind through a medium plate 
4lbs of pork but and fattier is better.  Its pretty good for breakfast with some eggs too. Pretty good on the grill like a burger too.

My wife's health has improved to the point that between the two of us we made a big pot of soup yesterday. Lean hamburger, diced potatoes, whole kernel corn, and rotel are the main ingredients. A pan of cornbread was included and did both dinner and supper. It will do the same today and is even better each time it's reheated.

That sounds really good. Around here if I make soup or stew I’m the only one that eats it. Kinda disappointing...

We always make a big pot because if our son finds out about it he will eat half of it and since he drops in almost every day to check on us he knows what is to eat.

Tonight it was grilled steak about an inch thick, fried potatoes, fresh salad, and a corn, peas, and pepper dish compliments of our daughter and son-in-law. Deeee-licious. I probably will gain a pound over it though.

Charcoal grilled ribeye steaks and baked taters with lots of butter tonight.

Took a 1/2 Sugardale ham, coated it Orange sauce and heated it in a 200 degree oven for 1 hour, after letting it sit out, covered in aluminum foil all night; sliced some ham and dipped it in the juice in the bottom of the roaster.
Not bad, not bad at all.
