I bought a 12 pound Honey Suckle turkey for Thanks Giving but yesterday ordered , online, two 4lb roasting Pheasants also.

I have cooked pheasants for Thanks Giving in the past but that was almost twenty years ago.
You used to be able to go to former foo-foo grocery stores, or even some average ones, and buy frozen pheasants, but now they do not do that around here any more.
There used to be a game farm out here where you could also buy frozen wild, including pellets pheasant but I think that place shut down some time ago.

As I said I have not had roasted , verses fried and baked in heavy cream, pheasant for a long, long time; they cost 60 some dollars, with shipping but were far cheaper than 100 percent of others I saw for sale by far.
Next year, I just may, save up big bucks a finally buy a Pea Fowl for Thanks giving, best to get it out of my system.

I cooked our Thanksgiving dinner and it turned out well.

I brined the Pheasant as per one set of instructions for 6 hours with a blend of bringing solution based on an amalgamation of multiple versions online.
It was a  boiled and cooled concoction  based on one video for roasting a Pea Fowl, with the addition of a large glob of Greek seasoning, Cider Vinegar, Soy Sauce and chunk Black Salt rather than Kosher Salt.

Recipe said bake at 500 degrees for 15 minutes then 350 for another one half hour to 45 minutes, which is BS, I cooked it for over 2 hours and it still came out with pink juice, which is what some chefs say is how they do it, but the brining worked as it was nice and juicy.
The online line site always show a perfectly even browned bird which may be true if you have   5,000 dollar range but on mine only the breast part was nicely browned even though I smeared the whole bird with butter and pre-dried it as they said.

At that the 12 pound Honeysuckle Turkey  which was supposed to take no more than two hours took three hours before that plastic dobobber popped out and a lot of that was at temps. well over 350 degrees.
It did come out a nice brown though.
There were 5 of us and we had enough for a dozen people but the most silly thing was the other half had prepped plate of cheese and crackers, and some of us pigged out on that while I was cooking as they arrived an hour before the dinner was ready.
