Some years back, there was
a small restaurant a little old
lady ran, and she would have
a tex mex night, and one of the
things she would serve is what
I always referred to as tamale pie.
The place is long gone, but I never
forgot how great that stuff was.
I've been trying to find a suitable
recipe for that dish, but most of
what I've found don't resemble tamales
in any way. I think I've improvised a
decent recipe but it hasn't cooled off enough
to sample.
Anybody have a recipe for such a thing that
doesn't have beans or cornbread mix or
creamed corn ?
I'm using yellow corn masa, taco meat,
tomatoes, onions, 2 kinds of peppers,
cheese, and more peppers, various spices
