Was in a thrift store last week and walked past a box of old kitchen knives.  Picked up a 9" fillet knive with a wooden handle that I thought might be a Chicago Cutlery but it was an Ecko Eterna.  It was surprisingly sharp so I looked a little harder.  Also in the box was a butchers steel.  I stroked that Ecko knife and I could tell from the feeling of the knife on the steel that it was getting sharper.  In no time at all it would shave.
It only cost $1 and is probably as good as the knives we use professionally at the dock at a fish cleaning service.  You just never know what you can find that someone has discarded.
