I know it has most likely been asked but not in a while.  As we have new members joining all the time I am curious as to which Small Game do you prefer for eating?  Personally I like young Brush Bunny's, deep fried served with home made potato/egg salad and corn on the cob.  A good Small Game Hunters Stew would come next.  Lawdog

Tell me more about this Small Game Stew. Getting hungry for a fat squirrel just thinking about a good squirrel stew.

Squirrel Dumplin's and a big pan of fresh biscuits just don't get any better.

Cook your squirrel the way you want then make these bad boys:

.....2 Cups self-rising flour
.....1/3 Cup mayonaise (not the fat free)
.....1 Tablespoon cooking oil or olive oil
.....1 tablespoon of sugar
.....1 Cup of whole Milk

Mix all this really good in a bowl and flour up a sheet of wax paper. Beat the dough, roll and knead it til it feels just right. You'll know when.
Take a big drinking glass and dip in your flour container or bag and then use the mouth of the glass to cut out your biscuits after rolling the dough out to about 1/2" thick. Cut out all the biscuits you can and roll the dough back out again and cut out more. Spray a flat cookie sheet or pizza pan with cooking spray and place biscuits on pan. When you run out of dough and have all your biscuits on the pan and ready, give the top of each biscuit a quick shot of the cooking spray. Put in the oven at 400° for about 10-12 minutes or until they get as brown as you like. When the top of them cat-heads start getting a tan brown color, leave them for one more minute and then take them out. Not too doughy and not to hard...Just right!!...half them open and put butter on each half and sprinkle a little sugar on it too.

Man, I'm wanting some squirrel now, dang it :D

WNC,

Here it is.

Quote
Small Game Hunter's Stew

meat from 3-4 rabbits/squirrels
2 qt. boiling water
2 potatoes
6-10 med. tomatoes
1 sm. onion
2 stalks celery
3-4 carrots
1 large(16 oz.) can of kernel corn
1/4 c. butter
1 1/2 tsp. salt
1/2 head sm. cabbage
1/2 tsp. pepper
1 (8 oz.) can green beans

Clean rabbits/squirrels and cut into 6 or 7 pieces each. To the water add the meat, butter, salt and pepper. Cover and simmer until tender (2-3 hours). Cool meat and remove from bones. Add rest of ingredients to broth. Cover and simmer until vegetables are done 1/2-1 hour. Add de-boned meat, heat and serve. Use a 6 quart Dutch oven. You can also use wild game birds as the meat.

Serve with fresh HOT corn bread smothered with butter and honey.

Tastes as good as it sounds.  Lawdog

I'd have to go with cottontails also. Crock-potted then made into fried taquitos and casadillas. Jalapenos added on the side. Monterrey Jack cheese.
