Your first mission for us should you choose to accept it................Find out exactly what chitterlings are and why do they eat them.
Being a Yankee and having Southern Parents and cousins, I found out.  Kind of whish I had not.
Still do not know why the are eaten.
I think I have the recipie.
Take all the wrappings off of a sausage.
boil them till they look like white worms and cut into 2" pieces.
Drain them and toss in a frying pan with a large scoop of dog poop and salt to taste.
At least that is what they look and smell like I have not gotten past the smell.

Well there ya go!   ::)  That's your problem!  Hog poop is more aromatic and flavorfull then dog poop!  That stuff is really crappy...  ;D

65%, born and raised in east central Il. have lived in Mn. for about eight years now. Most folks can figure out I'm not from around here! I get a lot of "you from Missouri?".

There is a pretty distinct line through Il. above which you are definitly yankee. I go with US24 on that and below I70 you are most definitly southern. I hail from the no mans land of I74.

Well there ya go!   ::)  That's your problem!  Hog poop is more aromatic and flavorfull then dog poop!  That stuff is really crappy...  ;D
Most of us Yankees have never seen a pig pen or smelled pig poop.
we all have steped in or around or scooped dog poop of some kind.
but my point was taken that I don't think they get it all out before they start cooking it.
Although I can say:
A pig pick is something you want to go to.
BBQ is not something that comes off a grill and get red sauce on it (it is slow cooked and really good.)
Grits are good with fried eggs, sausage, and a little cheese.
Air dried sausage is awesome.  (trying for a couple years now to get my stepmother to send me some for my birthday.
Lard fried chicken.... You will smack the Col and ask him why he screwed up fried chicken.
Not sold on Collard green but with the Sweet pepper relish from the ladies at the wheat swamp church in La grange NC it is tollerable.  the relish also is great on a ham sandwitch.  MMM
What other southern (VA, NC, SC, Tenn, and GA)

Not surprising, since the furthest I've ever been into the US from Canada is Boston. But I use some of that Dixie talk (especially y'all) because I had some North Carolina friends growing up.
My avatar is pretty much what I look like out in the woods - except I am not a "chick" in any sense of the word.

No sir he is not. However, he is my HERO of that time, along with respected Southern Gentlemen such as Nathan Bedford. Forrest, Jublal Anderson Early, Thomas Jonathan "Stonewall" Jackson, and many more of their stature. only to mention a few.

My father was born in December, 1890. His father, my Grandfather, DID participate in the "War For Southern Independence" as a camp hand and a prison guard in Petersburg, Va. over the Yankee prisioners. I have the handgun which he used during this time.

No problem. I did not take offense at your reply at all. I just take a great deal of pride in my Southern Heritage. In today's society the mention of, much less the actual sight of, the Confederate Battle Flag causes many uninformed and uneducated people to tend to get their panties all bunched up in a wad. If only they would stop, make an effort to learn more about this conflict and it's causes and results, things would be abundantly clear to them.

grew up in Texas and North carolina;  lived in NY for 40 years. I only scored 28%. Seems these yankees stripped all the best parts of me.

At least a third-generation Mississippian and a graduate of The University of Mississippi (Ole Miss Rebels, you know), I have several ancestors who were Confederate solders.  My great grandfather was in Company C, 1st Mississippi, known as Rube's Rebels.  So I suppose there's no question I'm a Rebel.  However, a lot of what I've been reading lately makes me wonder what my decision would have been in 1861.  I'm pretty sure it wouldn't have been easy.  There were a lot of Southerners who were torn between loyalty to their nation and loyalty to their state and region.  I think Robert E. Lee and Jefferson Davis struggled with that.  It was the same way in the American Revolution.  Today we scorn and call "tories" those who were loyal, and we call "patriots" those who were in reality rebels in the truest sense.  I suppose you are a patriot if you won and a rebel if you lost!

I was a Yankee, and had the fortune of doing 4 years in the Marine Corps, mostly in the South. I met some of the most genuine, honest endearing people in my whole life in the South.  I visited and lived in some wonderful places. Hell, I even picked up the drawl!  Ever since the South has had a very special place in my heart. People forget in our fast-paced world, that the Civil War is only "two grandfathers" ago... the issues, the perspective of both sides aren't all that healed.  Both deserve consideration and respect. Besides the southern boys are better hunters!!   ;)
