Any way to make them ripen faster, was thinking about taking a few off the vine and throwing them in a paper bag and closing the top?

No, NO, NO!!!!
Leave them maters on the vine to ripen. Your taste buds will thank you. We've eaten and frozen a bunch already. Ours are about to play out. I think I'm gonna pull what's leave and have them as friend green maters. Yum, yum.

I am going to end up with a bunch of green tomatoes at the end of the season and believe I will pickle them. Been thinking about frying some up though

I don't personally care for pickling anything but cucumbers into pickles. Fried green maters is good vittles.
