Hmmmm carrots won't survive

Well, found out carrots will not survive one of our winters if left in the garden.  Checked them yesterday and they were mush.  Maybe if I put about 3' of straw over the tops of them they would survive if the ground didn't freeze.  But when average temps are around zero at night....guess I'd better pull them all this year.

Parsnips are a member of the carrot family, and I have had very good luck leaving them in the ground until spring.You must have some pretty cold winters where you are located.

carrots need to be kept at about 34 deg F for best storage.  I'm gonna try something this fall with potatoes and carrots.  Basically a storage mound, mentioned in the encyclopedia of organic gardening, and described in detail in the book "5 Acres and independence" by M.G. Kains.

I saw a guy who had a root cellar and had potatoes, carrots, parsnips, and squash buried in about 3 feet of sand. Kept the vegggies fresh all winter.
