I had no idea all folks don't know grits. I once was in a small diner near Atlanta, about 0300,asked for breakfast,the gal told me I could have eggs,bacon, sausage,ham,gravy,biscuits or toast but I couldn't have breakfast cause the grits aint done yet! Another nice use; let leftover grits stiffen up,then slice about 3/4 inch thick and fry in a little bacon grease,cover with old bay saute'd shrimp, and an alfredo type sauce over the top and you have a reasonable facsimile of southern shrimp & grits.Also,no joke,some great carp dough(thats BAIT for y"all folks that don't know grits!)can be made from dry grits and ketchup.
