I have had good luck with a couple of bullets. The Lee 340 grain flat nose seems quite accurate (if you cast) If you don't cast, the Hornady 300 grain HP is very accurate as well and kills deer quite dead. (Which is why I switched to a 45-70 about 15 or more years ago, I don't enjoy looking for dead deer.)
Unless you are shooting something substantially larger than deer, there really is no reason to go heavier than a 300 grain bullet. That, coupled with a medium load of Reloder-7 (we use forty one grains) is plenty for deer and doesn't have a lot of recoil.
The Lyman 292 grain flat nose bullet (I think that is the weight) seems to be a candidate as well, though we have only tried in an 1886 Browning so far. Two inch groups, 100 yards, iron sights, bad eyes. Not shabby.
