What is the difference between barrels
stamped Custom Shop and the ones that aren't?

TC's web site did not help much

Generally a custom shop barrel is a barrel that is not a catalog listed barrel. I have heard that the custom shop gets new reamers and use them for a few times (?) and give's the reamesr to production. Also, the custom shop smiths are better than production. That is all hear say.

The difference in Custom Shop barrels is that you can get the chambering, barrel contour, stainless vs blue, barrel length, etc. that you want.  I haven't been able to tell any difference in quality between the Custom Shop and regular production T/C barrels.

That is all hear say.

More commonly heard is that they use the same equipment and the same employee's to make the so called CS barrels as also makes the production barrels.   Only difference is way more chamberings not offered in production barrels are available, and you choose the length. profile, finish, other options, etc.   Barrel blanks are standard same as factory barrels.
Evolution at work. Over two million years ago the genus Homo had small cranial capacity and thick skin to protect them from their environment. One species has evolved into obese cranial fatheads with thin skin in comparison that whines about anything and everything as their shield against their environment. Meus

Thanks Guys.
Is that why both of my 7-30 Waters barrels are Custom Shops,
Not a standard production caliber?
