I wanted to try something new with waterfowl. I cut two Specklebelly goose breast filets in strips and marinated them overnight in some type of liquid fajita marinade that my wife bought. I cooked them over a charcoal grill using a tray with small holes in it for grilling fish, shrimp, etc.
I have to tell you, that was some of the best fajitas I have eaten in quite a while!
