Recipes for Buffalo -- Help!

I don't know if Buffalo is considered wild game -- but my husband got his hands on the meat of half a buffalo and I have NO recipes for this.  :( Help!  Does anyone have ANY ideas? Can I substitute buffalo in most recipes for venison/elk/moose/etc.?

Thanks for any help you can give me with this.

Low and slow is the key. It will cook faster than beef. Not knowing what cuts you have that is as simple as I can make it. You can send it to me if it is too much trouble. :-D  ROB
