My deer roast recipe

Hey all I'm new here. I came over here with the rest of the H&R talk guys. I love hunt & shoot and so it comes natural that I love to cook. So here is my recipe for a great roast.


One complete rear quarter from small deer. I put it in my big porcelan turkey pot. Salt & pepper really good. Add 2 cups water, 2 beef boyan cubes, 2 tablespoon soy sauce, and one can of beer. Cook on low heat (300 degrees) for about 3 hours. The beer also acts as a meat tenderizer. I check it about every 40 minute and turn it and baste. After 2 1/2 hours I add my cubed potatoes, carrots. When three hours are up I put my celerary and green beans in and cook for another 30 to 40 minutes. The meat is so tender you just can not help but eat to much.

I can tell by the recipe you like good vittles. You don't add the greens untill the last 30 mins. They get bitter if cooked too long. Bell pepper is the worst. ROB
