circle hooks for sturgeon

I have tried using circle hooks for sturgeon size 7/0 with varying luck. We are fishing strong current so we can't leave our drags very loose and the sturgeon come up and give the bait one good tug and there gone. I understand you are supposed to feed them line and just lift up on the rod to set the hook but by that time they are gone.any tips would help!  Thank you

I never had the chance to fish for sturgeon (i keep hoping) on big Red drum and black drum you have to give them
time to turn away, or swallow it, then the line will pull the hook out into the corner of their mouth, if
you are to quick the hook doesn't make the turn.

Thanks rex6666 for the reply I'm going to try a larger hook to see if that makes any difference also.
