:?: What is your preferred method of sharpening your good knife blades? I am experienced with good quality stones, and with good quality steels, both steel and ceramic. I would like to know your opinions concerning the diamond sharpening devices such as those made by DMT. I do not have much experience with these, but I read a lot about them, mostly positive.
I think that the flatness of the diamond devices, and the fact that they would retain this flatness over a long period of use, would be a plus. I have recently seen an advertisement for the DMT brand which lists either an 8 inch or a 10 inch stone, with a plastic base or holder that would allow the diamond stone to sit between an inch and two inches above the surface of the table or bench. Looks like it would be easy to use. I believe the grits listed are extra coarse, coarse, fine and extra fine, with the opportunity to get each stone with one of these grits on either side. Pretty pricey, but if they work, they oughta last a lifetime.
