Preferred Method of Sharpening

:?: What is your preferred method of sharpening your good knife blades? I am experienced with good quality stones, and with good quality steels, both steel and ceramic. I would like to know your opinions concerning the diamond sharpening devices such as those made by DMT. I do not have much experience with these, but I read a lot about them, mostly positive.

I think that the flatness of the diamond devices, and the fact that they would retain this flatness over a long period of use, would be a plus. I have recently seen an advertisement for the DMT brand which lists either an 8 inch or a 10 inch stone, with a plastic base or holder that would allow the diamond stone to sit between an inch and two inches above the surface of the table or bench. Looks like it would be easy to use. I believe the grits listed are extra coarse, coarse, fine and extra fine, with the opportunity to get each stone with one of these grits on either side. Pretty pricey, but if they work, they oughta last a lifetime.

Are they any good? Why? Why not? Thanks very much for sharing your experiences and expertise. :bye:

:D Howdy Ken   I don't have one. I have used one that belonged to an aquaintence.  He had stoped at the Smokey Mountain Knife Works while on vacation and was showing it off, I don't know the grit, but it must have been fairly fine, it did a wonderful job in a short time.  It did good enough that it jumped way up on my "I need this" list as opposed to the "I want this" one.  Recently, the A.G. Russell catalogue and web site have added them, with a comment from Mr. Russell   http://www.agrknives.com/maintenance/index.html .  Not to indicate that I consider him to know all, just another knife maker with some experience.

I saw the ad in the AG Russell catalog, and that reminded me that this was something that I needed to make up my mind about. MR. Russell always has some interesting and good looking stuff for sale. His is not a discount place by any means, and I would guess that one might purchase these DMT's for a bit less in some other spot. I read what he had to say, and would guess that he said it because he really felt that way. I will check out the web site you listed. Thanks for the info, and for your feelings about the matter.

Don't look at me, I use a beltgrinder/buffer/leather strop/ japanese water stone......Heard those diamond sharpeners are good though, for what that's worth.

1) PUt initial edge on with belt sander
2)Move to the Diamond Stone
3)On to the soft Arkansas
4) Next the hard arkansas
5) Then Porcelain Sticks
6)Finally, Just touch the Edge on a Muslim Wheel with Green Rouge.
