Love's Outdoors & Spo -- what do you do with the rays and sharks? if you eat them, how do you fix them?

Sharks and Rays do not have a bladder and so they get rid of their wastes by excreting their ureic acid (pee) through their skin. That means that the meat needs to be marinated first to neutralize and remove the acid. There are lots of different marinates to use for this. Some soak the Ray fins in milk for 24 hours but there are other ways too. That will remove the fishy taste and bring out the delicate scallops flavor. I do not have any recipes handy but you should be able to do a computer search and find one you like.
