do you mix finishes on your encores? blued and steel, or vice versa?
does it look like crap? or is it acceptable.
any shooting differences between stainless and blued steel?

I mix frequently. If the esthetics bother you, SSK Industries can give you a milspec finnish that will have all the metal the same shade of dull black.
