This is a pretty tough question to answer because you have determine exactly how you want to use the motor. Also are you willing to entertain a 24 volt system or will you stick with a 12? And what is your budget?
If you are primarily going to bang along a shoreline or hit structure, then I would think you could get by with a 12 volt system with 50 to 55 lbs of thrust assuming you are not fighting alot of current or wind. I would also think you would want to have a pedestal seat near the bow, a bow motor mount and a some sort of remote/foot control system. A tiller would be pretty inconvenient.
Now if you are into trolling, then I'm not sure what to suggest. I'd be more inclined to use a small gas motor. But those electric systems that mount to the outboard are nice albeit pricey.
Also, please keep in mind that more thrust from a 12 volt system doesn't mean more top speed. It does mean more acceleration but a 12 volt system is going to turn a prop around 1200 rpm and 12 volt props have generally the same pitch. A higher thrust motor may help you get to top speed faster but top speed is top speed whether it be with motor of 30 lbs of thrust or 55 because of the rpms and prop pitch. A 24 volt system will give you a real edge in this regard because it can turn a prop at around 3600 rpm.
