Deer neck roast

I forgot how good they were on sandwiches, made mine with mayo, salt and pepper, sons with no salt and avocado w pepper, lime juice, olive oil and spicy mustard. He is on a health mission. The neck was one of last years deer, deer tends to hold up well vacuum packed in good freezer bags.

I usually just trim the neck for sausage
or ocassionally put one whole in a crockpot
with onions and make up the whole
thing into pot bbq

It's another reason why I always shoot
for the pumphouse.
Neck roast is too good and too useful
to mess it up with a bunch of bone shards
from shooting at it

i got good fileting them out when i was doing crop damage. dad took alot of them when i was swimming in them. most of mine where boned out and put in the electric pressure cooker for an hour drain the fat and pull ot whats left, then i add cider vinegar and barbeque sauce and made like pulled pork. tjey were dads favorite roasts and when he had a pile hed do burger with some. opening day at camp hed usually have 2 or 3 good sized necks in the big roaster. depending on how many were at camp
