Sauces and salad dressing

Started making my own and generally eyeball amounts, son is on a health kick reading books on foods etc. Been marinating chicken and pork in my own version of Italian dressing. Started with oregano but removed as I don’t care for it in the dressing but do like it in pizza sauce. Been reducing sugar and salt and done away with fructose. Actually I’ve been making sauces for years and altered them yet still good. Anybody else?

Long ago I would keep a mason jar of both charter (preferred) and clear. The answer is no although my grandfather was a moonshiner along with other forms of racketeering traits and he did not end well. I have a picture of him standing on a very large still.

Only sauce I make is marinara sauce with juice from home grown tomato's.

I make multiple spaghetti sauces, barbecue, honey mustard, horseradish, tartar, salad dressing and Many more. Problem is I don’t keep recipes or amounts so they vary from batch to batch.

A problem of mine also; if I cook something and people say, oh that is good what did you use, my answer is usually , umm, umm, this, that and the other stuff.
